Tis the Season for Holiday Baking: 4 Cannabis Infused Recipes

The holidays are just around the corner now, so if you haven’t gotten started on your holiday baking, it’s time to put it into high gear. But if you’re looking to upgrade your goodies this year with your favourite cannabis strain, you’ve come to the right place. In this article, we’re sharing a few of our favourite holiday recipes infused with cannabis.

To get started, make a stop at your local dispensary for a strain of your choice. Then it’s time to get home and start your prep, which is centered around the crucial decarboxylation process. Here are 4 of our favourite cannabis infused baking recipes for the holiday season:

 

Gingerbread Cookies

Your Christmas baking would not be complete with gingerbread, the classic holiday cookie. The holiday spices like nutmeg and cloves used in the recipe mixed with the sweetness make them flavourful and lovable. Plus, they’re fun to make. You can get creative with gingerbread, using cookie cutters of your choice and layering on the icing sugar.

Ingredients (18 cookies)

  • 2 ¾ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp dried ginger
  • ½ tbsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp cloves
  • ¼ cup cannabutter
  • ¼ cup butter
  • ½ cup brown sugar
  • 1 small egg
  • ½ cup molasses
  • ½ tsp vanilla extract
  • Decorative icing (optional)

Instructions

  1. In a large bowl, let’s start with the dry ingredients. Mix together your flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.2.
  2. In a separate bowl we can work on the wet stuff. Beat your cannabutter, regular butter, sugar and egg together on medium speed. Once combined, add the molasses and vanilla extract.
  3. Now it’s time to combine the wet with the dry. The key is to beat it in slowly, pouring little amounts at a time.
  4. Once you’ve reached a firm consistency in the dough that isn’t crumbly, flatten the dough on the countertop and wrap it in plastic. From there, transfer to the refrigerator for at least a couple hours.
  5. Once 2 hours is up, lightly flour the countertop and roll the dough. Then you can put your cookie cutters to work.
  6. Transfer all your cookies to a greased baking sheet and bake at 350° F for 10 minutes or until firm to the touch. Once they’ve cooled, you’re free to decorate as you please!

Caramel Pecan Pie

This caramel pecan pie recipe is definitely a step up from your standard cookie. It’s not so easy to make, so you’ll need to sharpen your baking skills for this one. But the hard work is worth it, this pie is deliciously sweet and perfect for the holiday season.

Ingredients

  • 1 ¾ cups cannabutter
  • 4 cups chopped pecans
  • 2 cups all purpose flour
  • ¼ cups powdered sugar
  • ½ cup brown sugar
  • ½ cup honey
  • 3 tbsp whipped cream

Instructions

  1. The first step is to chop the pecans and toast them in the oven at 350°F for about 5-10 minutes.
  2. To get started on the crust, mix 1 cup of cannabutter with you flour and powdered sugar. It’s strongly recommended to use a food processor for this step.
  3. Once the crust is made, pat it onto the bottom of the cake tray and bake it at the same temperature for about 20 minutes.
  4. While that’s baking let’s start on the filling. In a saucepan over medium heat, mix the brown sugar, honey, whipped cream and remaining cannabutter to a boil. Then, stir in the pecans.
  5. Once the filling is well mixed, pour it over the crust. Then you’re ready to return the pie to the over for another 20-30 minutes.

Sugar Cookies

If you’re looking to dial it back a bit and bake something a little simpler, the sugar cookie is a great option. Loved especially around the holiday season, these sugary biscuits are easy to make while leaving the door open for creativity. You can use a cookie cutter to shape them, or you can drop them right on the pan. Then you can go crazy with the festive icing!

Ingredients (12 cookies)

  • ½ cup cannabutter
  • ¾ cups granulated sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1 ½ cups all purpose flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 2 tsp sugar for rolling

Instructions

  1. The first step is to mix together your cannabutter and granulated sugar, followed by the egg and vanilla extract.
  2. In a different bow, add the dry ingredients – flour, baking soda, and baking powder. Give it a good mix.
  3. Now it’s time to combine the dry mixture with the butter mixture. Be careful not to over mix here – you want to avoid a crumbly texture.
  4. Now you can begin portioning out your cookies. Shape them by hand then roll them in the powdered sugar before adding to the baking sheet. It will help to flatten them slightly with a fork.
  5. Bake in the oven at 375°F for about 13-15 minutes. When done, be sure to let them cool!

Candy Cane Brownies

It’s time to integrate the candy cane – the most iconic piece of Christmas décor – into your holiday baking. When the cany cane flavours and mixed into a brownie, you’re left with a fudgy, rich dessert with a subtle mint flavour. Plus, the crushed-up candy canes on top ensure these brownies are certified festive.

Ingredients (12 brownies)

Brownies

  • ¾ cups all purpose flour
  • ¾ tsp baking powder
  • ½ tsp salt
  • 3 oz unsweetened chocolate
  • ½ cannabutter
  • ½ cup granulated sugar
  • 3 eggs
  • 1 ½ tsp peppermint extract

Glaze

  • 3 tbsp heavy cream
  • 4 oz chocolate chips
  • 2 peppermint candy canes

Instructions

  1. Starting with the dry ingredients for the brownies, stir up the flour, baking powder and salt.
  2. In a separate bowl, met your chocolate and cannabutter in a saucepan over medium heat. Once the mixture is smooth, remove from the heat and whisk in the sugar, eggs, and peppermint extract.
  3. Still off the heat, now you can stir in the mixture to the smooth mixture in the saucepan.
  4. Dump your newly formed batter into a greased pan and bake at about 25 minutes at 350°F. Once done, allow the brownies to cool for at least another 25 minutes.
  5. To prepare the glaze, melt the chocolate chips and heavy cream together over medium heat and pour them on top of the brownies. Finally, crush up your candy canes and sprinkle!
