Strawberry Honey Oat Bars
If you’re looking for a homemade sweet treat for the Spring season, you’ve got to try these strawberry honey oat bars. They’re soft and chewy with just the right amount of sweetness, plus they’re far healthier than most sweet treats. We’re going to tackle the strawberry filling first before moving to the oat crust. *Make sure to take your butter out of the fridge in advance!
Ingredients
Strawberry Filling
- 1 lb sliced strawberries
- ¼ cup honey
- ¼ cup granulated sugar
- 1 tbsp cornstarch
Oat Crust
- 1 ½ cups large flake oats
- ¾ cup whole wheat flour
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup unsalted room temperature butter
- ½ cup brown sugar
- ¼ cup cannabutter
Instructions
- To start the strawberry filling, add your strawberries, honey, sugar and cornstarch and mix it up. Set aside for later.
- Preheat your oven to 340 F, and line a baking pan with parchment paper.
- For the oat crust, stir your oats, flour, baking soda and salt together in a separate bowl.
- In another bowl, stir together the butter, cannabutter and sugar. Once combined, you can slowly stir together with the oat mixture. You want everything well mixed but still crumbly and not overmixed.
- To build the oat bars, spread about two thirds of the oat mixture into your pan and give it a good press. Then you can add your filling, before topping with the remaining oat mixture. The top layer does not need to be pressed.
- Bake for 30-35 minutes or until golden brown.
